Cheesy Manicotti
INGREDIENTS

  • 1 lb ground meat
  • 1 – 28 oz can diced tomatoes
  • 1 – 6oz can tomato paste
  • 1 onion, minced
  • 2 tsp minced garlic
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp parsley
  • 1/4 tsp of each: oregano, basil, rosemary, and marjoram
  • 1/2 lb ricotta cheese
  • 1 – 8oz cream cheese, softened
  • 2 eggs
  • 8 manicotti shells, cooked
  • 1/3 cup Romano cheese, grated
DIRECTIONS
  1. Brown beef in skillet. Drain. Add next 7 ingredients. Mix well. Simmer for 1 hour. Combine cheeses (except Romano), eggs and seasonings and stuff into shells. Pour 1/3 of meat sauce in shallow baking dish. Arrange stuffed shells in dish and top with remaining meat sauce. Top with Romano cheese. Bake at 325 degrees for 35-45 minute.
