Cheesy Manicotti
INGREDIENTS

- 1 lb ground meat
- 1 – 28 oz can diced tomatoes
- 1 – 6oz can tomato paste
- 1 onion, minced
- 2 tsp minced garlic
- 3/4 tsp salt
- 1/8 tsp black pepper
- 1 tsp parsley
- 1/4 tsp of each: oregano, basil, rosemary, and marjoram
- 1/2 lb ricotta cheese
- 1 – 8oz cream cheese, softened
- 2 eggs
- 8 manicotti shells, cooked
- 1/3 cup Romano cheese, grated
DIRECTIONS
- Brown beef in skillet. Drain. Add next 7 ingredients. Mix well. Simmer for 1 hour. Combine cheeses (except Romano), eggs and seasonings and stuff into shells. Pour 1/3 of meat sauce in shallow baking dish. Arrange stuffed shells in dish and top with remaining meat sauce. Top with Romano cheese. Bake at 325 degrees for 35-45 minute.
