Cheesy Mini Potato Nests
INGREDIENTS
- 8 cups(24-oz) of shredded has brown potatoes
- 1 egg slightly beaten
- salt and pepper to taste
- 1/2 cup sour cream
- 8 slices of cooked bacon, chopped
- 1-1/2 cups of fancy shredded cheddar or mild cheddar cheese.(Swiss would be good too as well as a Taco cheese blend)
DIRECTIONS
- Combine the potatoes, egg, salt and pepper.
- Mix very well. Coat a mini muffin pan very thoroughly and place 2 Tbs of the potato mixture into each cup.
- Use your fingers or the back of a spoon to press firmly on the bottom and up the sides of each mini muffin.
- Bake at 450 for about 20 minutes( should check after 15 minutes or bake at a lower temperature)
- Sprinkle the cheese into each baked potato nest. Return to the oven for 2 minutes. Sprinkle each nest with the chopped bacon and top with some additional cheese if desired.
