Cheesy Mini Potato Nests
INGREDIENTS
  • 8 cups(24-oz) of shredded has brown potatoes
  • 1 egg slightly beaten
  • salt and pepper to taste
  • 1/2 cup sour cream
  • 8 slices of cooked bacon, chopped
  • 1-1/2 cups of fancy shredded cheddar or mild cheddar cheese.(Swiss would be good too as well as a Taco cheese blend)
DIRECTIONS
  1. Combine the potatoes, egg, salt and pepper.
  2. Mix very well. Coat a mini muffin pan very thoroughly and place 2 Tbs of the potato mixture into each cup.
  3. Use your fingers or the back of a spoon to press firmly on the bottom and up the sides of each mini muffin.
  4. Bake at 450 for about 20 minutes( should check after 15 minutes or bake at a lower temperature)
  5. Sprinkle the cheese into each baked potato nest. Return to the oven for 2 minutes. Sprinkle each nest with the chopped bacon and top with some additional cheese if desired.
