Cheesy Potatoes
  • 6-8 potatoes
  • 4 TBSP. butter
  • 4 TBSP. flour
  • 2 c. milk
  • 1/2 16 oz. pkg. of Velveeta cheeseCheez-its
  1. Boil potatoes with skin until firm; cool, peel and cut into chunks. Melt butter in saucepan; slowly add flour stirring to make a roux. Add milk and continue stirring until mixture thickens slightly. Cut cheese into small chunks and add to milk mixture, stir until melted. In large casserole, layer potatoes and cheese mixture. Top with crushed Cheez-its and bake at 350 degrees for 20 minutes or until cheese bubbles.
