Cheesy Potatoes
INGREDIENTS
  • Servings: 8
  • 1 - 10 3/4 oz. can condensed
  • cream of chicken soup
  • 1 - 8 oz. sour cream
  • 1 c. shredded cheddar cheese
  • 1/4 tsp. pepper
  • 1 - 28 oz. pkg. frozen loose-
  • packed diced potatoes with onion
  • and peppers thawed
  • 2 c. cornflakes, crushed
  • 2 Tblsps. butter, melted
DIRECTIONS
  1. In a large mixing bowl, combine
  2. condensed cream soup, sour cream,
  3. cheese and pepper. Stir in potatoes. Transfer mixture to an ungreased 2 qt. rectangular baking dish. Mix the crushed cornflakes and melted butter. Sprinkle over the potato mixture.
  4. Bake uncovered at 375 degrees for
  5. 35 minutes or until golden brown.
  6. Makes 8 servings.
