Cheesy Vegetable Soup

  • 2-10 oz cans chicken broth plus water to make 1 qt
  • 1 c finely chopped celery
  • 1 c finely chopped onion
  • 2 1/2 c chopped potatoes
  • 1 c shredded carrots
  • salt and pepper to taste
  • 1 lb Velveeta cheese, cubed
DIRECTIONS
  1. Bring broth to boil and add celery and onions. Cover and cook on low for 20 minutes. Add potatoes, carrots, and seasonings. Cover and cook for 20 more minutes. Add cheese cubes and stir until thoroughly melted. Serve.
