Cheesy chicken & broccoli casserole
INGREDIENTS

- 3 chicken breasts, cut in 1 inch cubes
- 750g Broccoli
- 1 tbsp coconut oil
- 2 tbsp butter
- 4 tbsp cream cheese
- 1 ¼ cup heavy cream
- ½ cup water
- 2 tbsp universal herb mix
- 1 cup bacon cubes
- 2 ½ cups cheese, shredded
- salt and pepper
DIRECTIONS
- Preheat oven to 350° Fahrenheit
- Pan fry chicken in coconut oil until slightly browned from all sides, then set aside
- At the same time, cook broccoli for about 5 minutes (in salted water or microwave)
- Melt butter in a large skillet
- Add cream, cream cheese, water, herb mix, bacon and ½ cup shredded cheese and cook at medium heat for around 5 minutes
- Season with salt and pepper
- Add broccoli and chicken and mix
- Transfer to an ovenproof dish and cover with remaining cheese.
- Bake for around 20 minutes
