Cheesy chicken & broccoli casserole
INGREDIENTS

  • 3 chicken breasts, cut in 1 inch cubes
  • 750g Broccoli
  • 1 tbsp coconut oil
  • 2 tbsp butter
  • 4 tbsp cream cheese
  • 1 ¼ cup heavy cream
  • ½ cup water
  • 2 tbsp universal herb mix
  • 1 cup bacon cubes
  • 2 ½ cups cheese, shredded
  • salt and pepper
DIRECTIONS
  1. Preheat oven to 350° Fahrenheit
  2. Pan fry chicken in coconut oil until slightly browned from all sides, then set aside
  3. At the same time, cook broccoli for about 5 minutes (in salted water or microwave)
  4. Melt butter in a large skillet
  5. Add cream, cream cheese, water, herb mix, bacon and ½ cup shredded cheese and cook at medium heat for around 5 minutes
  6. Season with salt and pepper
  7. Add broccoli and chicken and mix
  8. Transfer to an ovenproof dish and cover with remaining cheese.
  9. Bake for around 20 minutes
