Cheezy Zucchini
  • 6-7 med zucchinis
  • 1 can Rotel Salsa
  • 1 8oz. Monterrey Jack Cheese
  • 1 8oz. Sharp Chedder Cheese
  • 1/2 stick butter(more may be use if needed)
  • salt and pepper to taste

  2. 1. Shred cheeses mix in bowl and set aside 2. Slice the Zucchinnis in thin cirle slices 3. melt butter in heated pan 4. add Zucchinnis to butter and lightly saute until light brown and alittle transparent becarful not to over cook you donot want the dish to be mushy. 5. add whole can to zuchinni and getly mix and salt and pepper to taste. 6.reduce heat to a simmer and add all cheese to zucchinni and do not mix just layer all cheese on top. Cover and let set for 6-7 mins or until cheese is completely melted.
