Cherries Jubilee
  • Servings: 8
  • 8 tablespoons granulated sugar
  • Juice of two oranges
  • Juice of two lemons
  • 2 cans dark pitted cherries
  • 2 ounces Marachino
  • 4 ounces Cherry Herring
  • 8 scoops vanilla ice cream
  • whipped cream
  • 8 tablespoons chopped almonds
  1. Melt sugar in pan at medium high heat.
  2. Add orange and lemon juices, stirring well, until sauce thickens.
  3. Add drained cherries and Marschino.
  4. Cook for ten minutes at high heat.
  5. Pour Cherry Herring over the cherries and ignite.
  6. Serve in eight dishes over scoops of vanilla ice cream.
  7. Top with whipped cream.
  8. Sprinkle with chopped almonds.
