Cherry Banana Pie
  • 1 9-inch pie crust
  • 1 can (16oz.) pitted tart cherries
  • 1 cup sugar
  • 3 Tablespoons corn starch
  • 1 Tablespoon butter
  • 1/2 teaspoon cinnamon
  • 1 teaspoon almond extract
  • 2 medium bananas
  1. In saucepan, mix cherries (with liquid), sugar and cornstarch. Cooks stirring constantly, until mixture thickens and boils. Boil and stir 1 minute, stir in butter and cool. Stir in cinnamon and almond extract, slice bananas in layers into baked pie shell. Pour filling over banana slices, chill until well set.
