Chicken & Rice Casserole
INGREDIENTS
- Cooking Time: 90
- 1/2 stick butter
- 1-1/2 cup uncooked rice
- 4-6 pieces uncooked chicken
- 1 can cream of mushroom soup
- 1 package dry onion soup mix
- water
DIRECTIONS
- Preheat oven to 350
- Melt butter and mix it with the rice.
- Place this mixture in the bottom of a casserole dish or 9x13 pan.
- Rinse the chicken pieces in cold water and dry off.
- Place on top of the rice.
- Spoon the soup over the chicken & rice.
- Sprinkle the onion soup mix over all
- Cover with water (about 3/4 of a soup can usually is about right)
- Cover and bake for 1 hr and 15 minutes.
- Uncover and bake for another 15 minutes.
- *cream of chicken soup can be substituted for cream of chicken
- *I usually use chicken legs but boneless skinless breasts or thighs also work well.
