Chicken & Rice Casserole

  • 1/2 stick butter
  • 1-1/2 cup uncooked rice
  • 4-6 pieces uncooked chicken
  • 1 can cream of mushroom soup
  • 1 package dry onion soup mix
  • water
  1. Preheat oven to 350
  2. Melt butter and mix it with the rice.
  3. Place this mixture in the bottom of a casserole dish or 9x13 pan.
  4. Rinse the chicken pieces in cold water and dry off.
  5. Place on top of the rice.
  6. Spoon the soup over the chicken & rice.
  7. Sprinkle the onion soup mix over all
  8. Cover with water (about 3/4 of a soup can usually is about right)
  9. Cover and bake for 1 hr and 15 minutes.
  10. Uncover and bake for another 15 minutes.
  11. *cream of chicken soup can be substituted for cream of chicken
  12. *I usually use chicken legs but boneless skinless breasts or thighs also work well.
My mom used to make this when I was growing up, and it was one of the first meals I made for my husband when we were dating. It's a hit every time.
