Chicken Arroz Caldo (Chicken Rice Porridge)
  • 1 lb Chicken Drumstick (Or Wings)
  • 1 cup of Dinorado Rice (or any good quality rice)
  • 4 cloves of garlic
  • 1 small onion
  • 1 liter of water (or more)
  • 1 Medium sized (or half cup) Ginger
  • ¼ cup Fish Sauce (Patis)
  • 1 chicken broth cube (optional)
  • ¼ cup toasted Garlic
  • ¼ cup chopped spring onion
  • Few pieces of local lime (Calamansi)
  1. Chop the Onion and Garlic.
  2. Peel and chop the ginger.
  3. Wash the rice.
  4. Saute garlic and onion in a large pot, then add the chicken and ginger
  5. Wait until the chicken is slightly golden brown
  6. Add water and wait until it boils in high heat
  7. Then add the rice
  8. Mix it well, keep on mixing to avoid the rice sticking to the bottom of the pot.
  9. Check from time to time if the rice is cooked or if you need to add water.
  10. Once cooked, serve it hot and top it with toasted garlic, chopped spring onion and squeeze the local lime.
