Chicken Beer Bake

  • 4-6 large boneless chicken breasts
  • 4 to 5 T flour
  • salt and pepper to taste
  • oil
  • 1 (10 oz) can cream of chicken soup
  • 1 T soy sauce
  • 1/2 cup beer
  • 1 (3 oz) can sliced mushrooms
DIRECTIONS
  1. Wash the chicken and dry well on paper towel. Combine the flour, salt and pepper. Coat the chicken in the flour mixture and brown in 1-2 T of oil. Place chicken in a shallow pan. Combine the soup, soy sauce, beer and mushrooms and pour over the chicken.
  2. Bake uncovered at 350° for 1 hour, basting occasionally. Serve over rice.

This is another Klenk family favorite. I prefer to use boneless chicken breasts.
