Chicken Breast Piquante

  • 8 Chicken Breasts
  • Salt & Pepper
  • 1 Tbsp Butter
  • 15 Medium Garlic- Peeled
  • 2 Medium Tomatoes- Peeled & Chopped
  • 1/3 cup Red Wine Vinegar
  • 1 Tbsp Tomato Paste
  • 1 Can Artichoke Hearts-Drained
  • 3/4 Tsp Salt
  • 3/4 Tsp Thyme
  • 1/4 cup Sugar
  • Parsley & Parmesan for Garnish
DIRECTIONS
  1. Lightly salt & pepper both sides of chicken breasts.
  2. Melt butter in a skillet and lightly brown all breasts.
  3. Transfer breast to 9X13 pyrex dish- set aside.
  4. Add garlic, tomatoes, vinegar, tomato paste, salt, thyme, and sugar to drippings in skillet.
  5. Heat to boiling and stir for two minutes.
  6. Pour over chicken.
  7. Bake covered for 45 minutes at 375 degrees.
  8. Garnish with parsley and parmesan.
