Chicken Breast Piquante

- 8 Chicken Breasts
- Salt & Pepper
- 1 Tbsp Butter
- 15 Medium Garlic- Peeled
- 2 Medium Tomatoes- Peeled & Chopped
- 1/3 cup Red Wine Vinegar
- 1 Tbsp Tomato Paste
- 1 Can Artichoke Hearts-Drained
- 3/4 Tsp Salt
- 3/4 Tsp Thyme
- 1/4 cup Sugar
- Parsley & Parmesan for Garnish
DIRECTIONS
- Lightly salt & pepper both sides of chicken breasts.
- Melt butter in a skillet and lightly brown all breasts.
- Transfer breast to 9X13 pyrex dish- set aside.
- Add garlic, tomatoes, vinegar, tomato paste, salt, thyme, and sugar to drippings in skillet.
- Heat to boiling and stir for two minutes.
- Pour over chicken.
- Bake covered for 45 minutes at 375 degrees.
- Garnish with parsley and parmesan.
