Chicken Breasts Roasted with Bacon and Pears in Mustard Cream Sauce

  • 4 chicken breast halves, bone in
  • * 2-3/4 strips bacon, sliced
  • * 1-1/4 onions, diced
  • * 3 cloves garlic, minced
  • * 1 Tbs. plus 1 tsp. coarse grain mustard
  • * 2/3 cup heavy cream
  • * 2/3 cup dry white wine
  • * 2-3/4 seckel pears, cored and sliced
  • * 2 tsp. fresh thyme, chopped
DIRECTIONS
  1. Preheat oven to 400degreesF. In medium skillet over medium heat, place
  2. bacon and cook until crisp, about 3 minutes. Add onion and garlic; cook
  3. until very soft, about 8 minutes. Stir in mustard, cream and
  4. white wine. Add crumbled bacon pieces. Place pear slices in the bottom
  5. of 9 x 13 inch glass baking dish. Place chicken breasts on top of
  6. pears. Spoon mustard sauce over chicken; sprinkle with chopped thyme.
  7. Place chicken in oven and bake 40 - 45 minutes, until chicken is brown
  8. and cooked through and pears are tender. Baste chicken with sauce as it
  9. cooks. Garnish with thyme sprigs, if desired.
