Chicken Broccoli Casserole

  • 4 Chicken Breasts (skinless/boneless)
  • 1 pkg. Frozen Broccoli or 1 bunch fresh
  • 2 cans Cream of Chicken soup
  • 2 cups Rice (will be 4 cups after cooked)
  • 1 pkg. Shredded Cheese (I like a cheddar/mozzarella mixture)
  • 1/2 cup Mayo
  • Salt and pepper
DIRECTIONS
  1. Cook chicken breasts, rice, and broccoli. Cut chicken into bite size pieces and put in a large bowl. Add rice, broccoli, soup, mayo, salt and pepper. Mix well.
  2. Put in 9x13 pan. Spread cheese on top and bake at 350 for 30-40 min. Until cheese is lightly browned.
  3. I got this recipe from my mom. I have no idea where she got it from, but she has been making it since I was little. It's very easy and makes great leftovers too!
