- 1 tbsp olive oil
- 1 clove garlic chopped
- 4 cups cauliflower rice
- 1/4 cup scallions chopped
- 1/4 cup cilantro lime juice
- 1/4 lb ground chicken
- 2 tbsp taco seasoning
- 2 cups frozen corn
- Self serve sour cream

- Self serve lettuce
DIRECTIONS
- 1. heat 1 tsp oil to a large non stick saute pan, add garlic, and a pinch of salt
- 2. add rice to pan and cook until fragranced, transfer to a bowl and allow to cool before adding scallions, cilantro, and lime
- 3.heat a large saute pan over medium heat, add in remaining oil and chicken, season with salt and pepper
- 4.when chicken turns translucent to opaque add taco seasoning and stir, cook fully
- 5.defrost and prepare further ingredients
