Chicken Burrito Bowls WHOLE FOODS LAB

  • 1 tbsp olive oil
  • 1 clove garlic chopped
  • 4 cups cauliflower rice
  • 1/4 cup scallions chopped
  • 1/4 cup cilantro lime juice
  • 1/4 lb ground chicken
  • 2 tbsp taco seasoning
  • 2 cups frozen corn
  • Self serve sour cream
  • Self serve cheese
  • Self serve lettuce
  1. 1. heat 1 tsp oil to a large non stick saute pan, add garlic, and a pinch of salt
  2. 2. add rice to pan and cook until fragranced, transfer to a bowl and allow to cool before adding scallions, cilantro, and lime
  3. 3.heat a large saute pan over medium heat, add in remaining oil and chicken, season with salt and pepper
  4. 4.when chicken turns translucent to opaque add taco seasoning and stir, cook fully
  5. 5.defrost and prepare further ingredients
