Chicken Burritos (low-fat!)

INGREDIENTS
  • 8 wheat flour tortillas
  • 1 onion, chopped finely
  • 4 boneless/skinless chicken breasts, thinly sliced
  • 4 tomatoes, roughly chopped
  • 3 green onions, sliced finely
  • vegetable oil spray
  • 1 packet taco seasoning
  • 1 tub salsa
DIRECTIONS
  1. Preheat oven to 300F.
  2. Wrap tortillas in aluminum foil&cook in oven for 10 minutes.
  3. Spray large non-stick pan with oil. add onion & cook until softened.
  4. Add chicken until tender, about 5 minutes.
  5. Stir in taco seasoning.
  6. Turn oven up to 350F.
  7. Put chicken mix in center of each tortilla & add tomatoes & green onions.
  8. Fold tortillas into parcels & put in an ovenproof dish.
  9. Cover & cook for 20 minutes.
  10. Spoon salsa over burritos before serving.
  11. *I added jalapenos and nonfat-organic mexican shredded cheese before i wrapped the burritos!
