Chicken Burritos (low-fat!)
INGREDIENTS
- 8 wheat flour tortillas
- 1 onion, chopped finely
- 4 boneless/skinless chicken breasts, thinly sliced
- 4 tomatoes, roughly chopped
- 3 green onions, sliced finely
- vegetable oil spray
- 1 packet taco seasoning
- 1 tub salsa
DIRECTIONS
- Preheat oven to 300F.
- Wrap tortillas in aluminum foil&cook in oven for 10 minutes.
- Spray large non-stick pan with oil. add onion & cook until softened.
- Add chicken until tender, about 5 minutes.
- Stir in taco seasoning.
- Turn oven up to 350F.
- Put chicken mix in center of each tortilla & add tomatoes & green onions.
- Fold tortillas into parcels & put in an ovenproof dish.
- Cover & cook for 20 minutes.
- Spoon salsa over burritos before serving.
- *I added jalapenos and nonfat-organic mexican shredded cheese before i wrapped the burritos!
