Chicken Cacciatore

INGREDIENTS
- 2-4 lb chicken, in breast strips
- 2 tbs vegetable oil
- 1 onion
- 3 cloves of garlic *minced*
- 1 green pepper *chopped*
- 1 can diced tomatoes
- 1/2 tsp oregano
- 1/2 cup white win
- 2 cups mushrooms *quartered*
- salt and pepper to taste
DIRECTIONS
- In a frying pan, without oil, put chicken in and cook on on both sides for 3-5 minutes or until browned on both sides.
- Add the onion, garlic and green pepper until the veggies are slightly browned. Add tomatoes, oregano and wine. Cover and simmer for 30 minutes over meadium heat.
- Add mushrooms and salt and pepper to taste. Simmer for 10 more minutes.
