Chicken Cacciatore

  • Servings: 4
  • 2 pounds chicken parts
  • 2 Tbs. shortening
  • 1 jar pain spaghetti sauce
  • ¼ cup dry red wine
  • 2 large cloves garlic, minced
  • ½ tsp. oregano, crushed
  • 1 medium onion, thickly sliced
  • 1 medium green pepper, cut in strips
  • Cooked rice
DIRECTIONS
  1. In skillet, brown chicken in shortening.
  2. Pour off fat.
  3. Add remaining ingredients except onion and green pepper.
  4. Cover and cook over low heat 30 minutes.
  5. Add onion and green pepper.
  6. Cook 15 minutes more, stir occasionally.
  7. Serve on rice.
  8. Makes 4 servings.
