Chicken Cobbler Casserole

INGREDIENTS
  • 6 tbsp melted butter, divided
  • 4 c cubed baked pillsbury rolls
  • 1/3 c grated cheese (I use a cheddar/colby mix)
  • 2 tbsp chopped fresh parsley
  • 2 med onions, sliced
  • 1 (8oz) pack fresh mushrooms
  • 1 c white wine
  • 1 (10.75oz) can cream of mushroom soup
  • 1/2 c drained and chopped roasted red pepper
  • 2.5 c shredded cooked chicken
DIRECTIONS
  1. Toss 4 tbsp melted butter with first three ingredients; set aside.
  2. Saute onions in remaining 2tbsp butter over med-high heat for 15min. Add mushrooms and saute 5 more min.
  3. Stir in wine and next 3 ingredients; cook, stirring constantly, for 5 min or until bubbly. Spoon mixture into lightly greased 9" casserole dish; top evenly with bread mixture.
  4. Bake at 400 for 15min.
