Chicken Divan

- Chicken breast, cooked and sliced; or leftover roast or rotisserie chicken; or canned chicken
- 1 lb. broccoli, fresh or frozen, cooked until tender crisp
- 1 c. chicken broth
- 1/2 c. milk or half and half
- 3 T. cornstarch
- 1 c. shredded sharp cheddar cheese plus more for topping
- freshly ground sea salt and freshly ground pepper to taste
DIRECTIONS
- Layer the cooked broccoli into the bottom of a buttered casserole dish. Top with cooked chicken. Meanwhile mix chicken broth, milk or half and half, and cornstarch together in a sauce pan. Bring to boil and cook until thickened. Stir in cheese. Pour over top of casserole. Bake in an oven preheated to 350F for 20-30 minutes or until cheese is melted and casserole is bubbly. Serve immediately.
