Chicken Enchilada Casserole (home lab)

  • 8 6-inch tortillas
  • ½ cup chopped onion
  • 4 cloves garlic, minced
  • ¼ tsp. Black pepper
  • 2 tbsp. Butter
  • 3 tsp. All purpose flour
  • 1 cup sour cream
  • 2 cups chicken broth
  • ¾ cup shredded monterey jack cheese
  • ¾ cup shredded cheddar cheese
  • 2 cups chopped cooked chicken
DIRECTIONS
  1. 1.In a saucepan cook down onion, garlic, pepper in margarine until onion is tender.
  2. 2.Stir in flour to sour cream and add to onion mixture.
  3. 3.Stir in broth and keep stirring till thickened and bubbly.
  4. 4.Remove from heat and add in half of both cheeses
  5. 5.Divide chicken to each tortilla and add ¼ cup of sauce to each.
  6. 6.Roll each tortilla dn place seam down in a 9x13 casserole dish ; top with remaining sauce
  7. 7.Bake and cover in a 350 degree oven for 35 minutes.
  8. 8.Sprinkle remaining cheese and cook for additional 5-10 minutes or until cheese is melted. Let cool and enjoy.
