Chicken Piccata

  • Servings: 4
  • 4 chicken breast halves
  • 2 T olive oil
  • 1/4 cup dry white wine
  • 1 tsp. garlic minced
  • 1/2 cup chicken broth
  • 2 T lemon juice
  • 1 T capers
  • 2 T unsalted butter
  • fresh parsley
DIRECTIONS
  1. Pound chicken to thickness of 1/2 inch.
  2. Season cutlets with salt and pepper.
  3. Lightly dust with flour.
  4. Saute cutlets 2-3 minutes for each side.
  5. Remove cutlets and deglaze pan with wine.
  6. Add garlic and cook 2 minutes.
  7. Add broth, lemon juice and capers.
  8. Return cutlets to pan and add butter.
  9. Cook 1 minute or until butter is fully melted.
  10. Serve with noodles.
