Chicken Quesadilla
  • Large flour tortillas
  • Grated Mexican cheese
  • Precooked frozen Chicken Fajita meat
  • Frozen Fajita veggies, Cooked in small amount of olive oil
  1. Heat a frying pan on medium heat.
  2. Add a small amount of oil and saute veggies and chicken til tender.
  3. In another frying pan over medium-low heat, place one large flour tortilla.
  4. Put a handful of grated cheese over the top of the tortilla, making sure that the cheese does not land on the pan itself.
  5. Add your chicken & veggies, top with more cheese, then top with another tortilla.
  6. When cheese is melted, carefully flip over anf brown other side for several minutes.
  7. Remove from pan and cut into wedges.
  8. Serve with Mexican rice.
