Chicken Roll-ups

INGREDIENTS
  • 6 boned, skinless chicken breasts
  • 2 T. butter
  • 1 tsp. oregano
  • 1/2 tsp. parsley flakes, dried
  • 1/ tsp thyme, dried
  • 1/4 lb. Swiss cheese, sliced thin
  • 2 eggs, beaten
  • 1/2 C. flour
  • 1 C. bread crumbs, plain
  • 1/2 C. white wine
  • 3/4 stick butter
  • Salt and pepper to taste
DIRECTIONS
  1. Pound chicken until thin.
  2. Sprinkle with salt and pepper.
  3. Add a dot of butter on each chicken piece, and then add a small slice of cheese (I use 1 slice of precut swiss cheese packaged for sandwiches). Roll up, using a toothpick to secure.
  4. Dip the roll-ups in flour, then beaten eggs, and then the bread crumbs.
  5. Melt 3/4 stick of butter and add oregano, parsley and thyme.
  6. Pour half the mixture on the bottom of a rectangle baking dish.
  7. Add the chicken rolls-up, and then pour remaining butter mixture over the chicken.
  8. Bake in a 350 degree oven for 20 minutes.
  9. Pour the wine over chicken and bake an additional 15 minutes.
RECIPE BACKSTORY
This is my son's favorite chicken dish. It takes a little time to put together, but is oh, so good.
