Chicken Salad for Sandwiches
  • 1/3 to 1/2 cup mayonnaise
  • 1/4 cup chopped dill pickles
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. prepared horseradish
  • 2 cups diced cold cooked chicken
  • celery ribs
  • 2 green onions, chopped (about 1/4 cup)
  • 8 to 10 slices whole wheat bread
  • 4 to 5 lettuce leaves (optional)
  1. Combine mayonnaise, pickles, mustard, salt, Worcestershire sauce and horseradish and set aside. In an electric blender, grind one fourth of the chicken at a time then add to mayonnaise mixture. If the chicken sticks to the sides of the blender container, use celery ribs to push it down. Cut one celery rib into chunks and grind in the blender with onions. Add to mayonnaise mixture. Mix well and spread on half of the bread slices. Top with lettuce leaves and the remaining bread slices
