Chicken Salad with Mango
INGREDIENTS
  • 2 cups of chopped cooked chicken
  • 2 cups of chopped ripe mango
  • 1 large tomato, chopped
  • 1 medium red pepper, chopped
  • 2 green onions, chopped
  • 1/2 cup of low fat sour cream + tbsp of mayonnaise
  • 1 tablespoon each of balsamic vinegar and lemon juice
  • 1 teaspoon of sugar
DIRECTIONS
  1. Blend all chopped vegetables and chicken in a large bowl. Mix remaining ingredients together and add to the chicken and vegetables.
  2. Serve individual mounds on lettuce leaves.
