Chicken Satay with Indonesian Peanut Sauce

INGREDIENTS
  • 1/2 tsp cumin
  • 1/4 tsp fennel
  • 1/2 tsp corriander
  • 1/8 cup green onions, chopped
  • 1 large garlic clove, minced
  • 1/2 tsp lemon grass, minced
  • 1/8 cup macademia nuts, chopped fine
  • 1 tsp turmeric
  • 4 Chicken breasts, diced in 1/2 inch cubes.
  • 20 wood skewers soaked in water for 2 hours.
DIRECTIONS
  1. Mix ingredients for marinade in a large bowl and add chicken.
  2. Let chill for 4 hours then pierce chicken with wet wood skewer.
  3. BBQ or broil until golden brown but do not burn.
