Chicken Satay with Indonesian Peanut Sauce
INGREDIENTS
- 1/2 tsp cumin
- 1/4 tsp fennel
- 1/2 tsp corriander
- 1/8 cup green onions, chopped
- 1 large garlic clove, minced
- 1/2 tsp lemon grass, minced
- 1/8 cup macademia nuts, chopped fine
- 1 tsp turmeric
- 4 Chicken breasts, diced in 1/2 inch cubes.
- 20 wood skewers soaked in water for 2 hours.
DIRECTIONS
- Mix ingredients for marinade in a large bowl and add chicken.
- Let chill for 4 hours then pierce chicken with wet wood skewer.
- BBQ or broil until golden brown but do not burn.
