Chicken Scampi
  • 3 boneless skinless chicken breasts(pounded thin and flat), cut into strips
  • 1 small red,green,and yellow pepper sliced into very thin strips
  • 1 onion sliced in thin strips
  • olive oil to coat pan
  • salt and pepper- and any other seasoning you like
  • chopped garlic- I use 3 cloves but I love garlic
  1. Season chicken. Saute veggies and chicken in olive oil. Add parmessan cheese to taste when chicken is cooked through. I like alot but its a matter of preference. I also use freshly grated not the can. I serve this over hot fettuccini or alfredo pasta with a salad and bread. Its so good and very easy!
  2. * Sometimes I bread the chicken strip in italain bread crumbs and parmesan and brown in a little butter, instead of just plain. I have recently omitted the bread though due to the Atkins diet. I hope you like it! Its so good! And quick too.
