Chicken Stroganoff

- 1 tbs butter
- • 6 bacon rashers chopped
- • 1 capsicum cut into medium
- slices
- • 2 celery stalks finely diced
- • 1 onion thinly sliced
- • 10 mushrooms medium
- sliced
- • 2 chicken stock cubes
- • 1 1/2 cups water
- • 500 g cooked chicken
- • 2 cups cream
- • 2 tbs cornflour mixed with
- about 1/4 cup water
- • 2 tbs water
- • 1 pinch salt and pepper *to taste
DIRECTIONS
- Heat butter in a pan, then add bacon, capsicum, celery, onion and mushrooms and cook for 3 minutes.
- Add crumbled stock cubes, water ,chicken and simmer for 10 minutes over a low heat.
- Add cream and simmer for 2 minutes stirring until mixed
- Combine cornflour and extra water, blending to a smooth paste, then add to mixture, stir until thickened then season with salt and pepper.
