Chicken Stroganoff

  • 1 tbs butter
  • • 6 bacon rashers chopped
  • • 1 capsicum cut into medium
  • slices
  • • 2 celery stalks finely diced
  • • 1 onion thinly sliced
  • • 10 mushrooms medium
  • sliced
  • • 2 chicken stock cubes
  • • 1 1/2 cups water
  • • 500 g cooked chicken
  • • 2 cups cream
  • • 2 tbs cornflour mixed with
  • about 1/4 cup water
  • • 2 tbs water
  • • 1 pinch salt and pepper *to taste
DIRECTIONS
  1. Heat butter in a pan, then add bacon, capsicum, celery, onion and mushrooms and cook for 3 minutes.
  2. Add crumbled stock cubes, water ,chicken and simmer for 10 minutes over a low heat.
  3. Add cream and simmer for 2 minutes stirring until mixed
  4. Combine cornflour and extra water, blending to a smooth paste, then add to mixture, stir until thickened then season with salt and pepper.
