Chicken Tetrazinni
  • 1/4 lb cooked spaghetti
  • 1 cup of sliced fresh mushrooms
  • 4 tbsp butter
  • 2 tbsp sherry
  • 2 cups cooked chicken- chopped
  • 3 tbsp flour
  • 3/4 cup chicken broth
  • 1/4 cup white wine
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup heavy cream
  • Pinch of nutmeg (sounds weird but adds a nice flavor)
  • 1/3 cup shredded Italian mix cheese
  1. Saute mushrooms in 2 tbsp butter and sherry.
  2. Mix remaining butter, flour, chicken broth, wine, salt, pepper, nutmeg, and cream in saucepan on medium heat.
  3. Stir until it boils, add chicken and remove from heat.
  4. In shallow greased casserole pan, put pasta on the bottom, then the sauted mixture, then add the boiled sauce.
  5. On top, sprinkle cheese and bake at 400 degrees until brown and bubbly on top.
This a an easy. cream dish that is great for a large gathering.
