Chicken Vodka Pomodoro
INGREDIENTS
- 4 chicken breast halves
- 2 T olive oil
- 1/4 cup vodka
- 1/2 cup chicken broth
- 2 T lemon juice
- 1/2 cup tomatoes, seeded and chopped
- 1 clove garlic, minced
- 2 T cream
- 1/3 cup scallions
DIRECTIONS
- Pound chicken breasts until 1/2 inch thick. Season with salt and pepper, then dust with flour.
- Saute cutlets in oil for 2-3 minutes per side. Remove cutlets and pan.
- Deglaze with vodka and cook until vodka is gone. Add broth and lemon juice.
- Return cutlets to pan and cook for 1-4 minutes. Remove cutlets again.
- Finish sauce with tomatoes, garlic, and cream. Pour over cutlets and garnish with scallions. Serve with bread and pasta.
