Chicken Vodka Pomodoro

  • 4 chicken breast halves
  • 2 T olive oil
  • 1/4 cup vodka
  • 1/2 cup chicken broth
  • 2 T lemon juice
  • 1/2 cup tomatoes, seeded and chopped
  • 1 clove garlic, minced
  • 2 T cream
  • 1/3 cup scallions
DIRECTIONS
  1. Pound chicken breasts until 1/2 inch thick. Season with salt and pepper, then dust with flour.
  2. Saute cutlets in oil for 2-3 minutes per side. Remove cutlets and pan.
  3. Deglaze with vodka and cook until vodka is gone. Add broth and lemon juice.
  4. Return cutlets to pan and cook for 1-4 minutes. Remove cutlets again.
  5. Finish sauce with tomatoes, garlic, and cream. Pour over cutlets and garnish with scallions. Serve with bread and pasta.
