Chicken Zucchini Casserole

  • 3 med or 1 foot long zucchini
  • 1 chopped onion
  • 1 c thinly sliced carrots
  • 1 pkg chicken stove top stuffing
  • 1 can cream of chicken soup - divided
  • 1 or 2 small cans chicken
  • 1 c sour cream
  • 2 sticks margarine
DIRECTIONS
  1. Slice and peel zucchini. Boil til tender. Drain. Saute carrot & onion in 1 stick of marg. Combine zucchini, carrots, onions, soup, sour cream, chicken and stuffing mix - reserve 1 c of stuffing -in casserole dish. Brown 1 cup stuffing mix in 1 stick melted marg. Sprinkle on top of other ingred. Bake, uncovered, 30 to 40 min. at 350.
