Chicken pot pie

  • Chicken mixture:
  • 1 lb cooked bonless skinless chicken breast cut into pieces
  • 1 med. onion chopped
  • 1/2 c chicken broth
  • 1 c frozen vegetable
  • Salt/pepper
  • 1/4 t ground thyme
  • 1 c low fat cheddar cheese
  • Baking mixture:
  • 1/2 c bisquick mix
  • 1/2 c low fat milk
  • 2 egg whites
DIRECTIONS
  1. Pre heat 375 degrees
  2. Mix baking mixture and pour 1/2 T into greased muffin cups
  3. Mix chicken mixture pour evenly into each muffin tin
  4. Last add bisquick mixture to top of each egg mixture
  5. Bake 375 25-30 min
