Chicken salad with a twist

  • 1 lb rotini pasta
  • 1/2 c sesame seeds
  • 1/2 c canola oil
  • 2/3 c soy sauce
  • 2/3 c white wine vinegar
  • 6 t sugar
  • 1t salt
  • 1/2 t pepper
  • 4 c shredded chicken breast (about 1 rotisserie costco chicken)
  • 1/2 c chopped fresh parsley
  • 8 c spinach - torn into bite size pieces
DIRECTIONS
  1. Cook pasta in salted water, drain and set aside
  2. Toast sesame seeds in 1/2 c oil and let cool
  3. Once cooled, mix in with soy sauce, vinegar, sugar, salt, and pepper.
  4. Mix pasta and chicken together
  5. Pour liquid mix over pasta and chicken
  6. Let cool in fridge for 2-12 house
  7. Add parsley and spinach to chicken and serve
