Chicken with Tomato’s and Garlic

- 8 Chicken thighs on the bone, skin on
- 2 Teaspoons olive oil
- Salt
- 6 Large garlic cloves, roughly chopped
- 20 Ounce canned chopped tomatoes
- 1 Chicken bouillon cube
- 1 Cup water
- 2 Sprigs thyme
- Rice for serving
DIRECTIONS
- Simmer garlic for 1 minute in olive oil, in a large skillet. Add the tomatoes and chicken bouillon. Simmer on low heat for 5 minutes. Wash the chicken inside and out with clean water. Remove the skin. Add the chicken to the skillet. Cover the skillet. Cook over low heat for about 1 hour until the chicken is tender.
