Chicken with White Sauce

  • 2 chicken breasts, cut into bite-size pieces
  • 1 bunch scallions
  • 1 bunch mushrooms
  • 1/8 cup sherry
  • 1 cup beef or chicken stock
  • butter
  • 2 Tbsp. flour
  • 1/2 cup cream
  • salt pepper
  1. Panfry chicken in butter til brown on all sides
  2. Remove and set aside
  3. In same pan, add more butter if needed, then scallions and mushrooms
  4. Brown them and then return the chicken to the pan
  5. Deglaze bottom of pan with sherry and then add stock
  6. Simmer till chicken is nice and soft
  7. Meanwhile, in another small skillet, melt 2 tbsp. butter and add 2 tbsp. flour.. melt these together which makes a rue, or paste
  8. Slowly add cream, whisking to make a thick white sauceā€¦
  9. Pour over chicken and enjoy!
  10. Goes fabulously with basmati rice or garlic mashed potatoes
I tried this concoction today and it was so good!
