Chili Egg Puff
INGREDIENTS

  • 10 eggs
  • 1/2 cup flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 pint cottage cheese
  • 1 pound grated jack cheese
  • 8 ounces drained, diced green chilies
DIRECTIONS
  1. Beat 10 eggs until light.
  2. Add:
  3. 1/2 cup flour
  4. 1 tsp. baking powder
  5. 1/4 tsp. salt
  6. 1 pint cottage cheese
  7. 1 pound grated jack cheese
  8. 8 ounces drained, diced green chilies
  9. Place in a well-greased 9 x 13-inch baking pan.
  10. Bake for 35 minutes.
  11. Serve immediately with pico de gallo or salsa of your choice.
