Chinese Almond Cookies

  • 2 c flour
  • 1 c almond flour
  • 1 c sugar
  • 1 3/4 c butter
  • 1t vanilla extract
  • 1t baking soda
  • 1/2 t salt
  • 1 egg, beaten
DIRECTIONS
  1. Melt butter, and mix with flour, sugar, salt and baking soda
  2. add beaten egg and vanilla
  3. roll into balls about the size of walnuts, leaving about 1/2" in between cookies on cookie sheet
  4. push thumb into middle of cookie
  5. bake at 350 degrees for 15 minutes or until golden brown

This is a traditional Chinese cookie that I can remember eating from when I was very small, as they were always at our family gatherings
