Chinese Coleslaw

  • 5 cups green cabbage, thinly sliced 2 cups red cabbage, thinly sliced 2 cups Napa cabbage, shredded 2 red bell peppers, thinly sliced 2 carrots, julienned 6 green onions, chopped
  • Dressing:
  • 6 tablespoons rice wine vinegar
  • 6 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons light brown sugar
  • 1 tablespoon honey
  • 2 tablespoons fresh ginger root, minced
  • 1½ tablespoons garlic, minced
DIRECTIONS
  1. 1. Combine all dressing ingredients in a medium bowl; whisk together.
  2. 2. Mix the cabbages, red bell pepper, carrots, and green onions in a large bowl.
  3. 3. Toss with the dressing just before serving.
