Chinese-style pork & noodle soup

- chicken stock 1 litre (4 cups) made using stock cubes
- dried egg noodles 200g
- baby bok choy 1 bunch, trimmed and shredded
- Chinese barbecue pork purchased 300g sliced
- bean sprouts 1 cup, trimmed

- Chinese barbecue pork purchased 300g sliced
- bean sprouts 1 cup, trimmed
- 1. Pour stock and 2 cups (500ml) hot water into a large deep saucepan. Bring to the boil over a high heat. Add egg noodles and cook for 2 mins. Add bok choy and pork and cook for a further 2 minutes or until heated through.
- 2. Remove saucepan from heat and stir through bean sprouts. Ladle into serving bowls and serve.
- Note: If you are unable to buy Chinese barbecue pork from a Chinese restaurant or barbecue shop, buy a pork fillet and roast in a 200C oven to 20 to 25 mins or until cooked to your liking. When cool cut into thin strips.
