Chocolate Amaretto Cheesecake

  • 1/4 cup chocolate wafer crumbs (see note)
  • vegetable cooking spray
  • 1 cup sugar
  • 1-1/2 cups Neufchatel cheese
  • 1 cup low-fat cottage cheese
  • 6 tablespoons unsweetened cocoa
  • 1/4 cup all-purpose flour
  • 1/4 cup Amaretto
  • 1/2 teaspoon salt
  • 1/4 cup egg substitute
  • 1 teaspoon vanilla extract
  • 3 tablespoons mini semisweet chocolate morsels
  1. Spread the chocolate wafer crumbs evenly in the bottom of an 8-inch springform pan coated with cooking spray. Set aside.
  2. Combine the sugar, cheeses, cocoa, flour, and Amaretto in the bowl of a blender or food processor. Process until smooth. Add the salt, egg substitute, and vanilla; blend only until combined. Fold in the chocolate
  3. morsels. Pour the mixture over crumbs in the pan.
  4. Bake at 300ºF for 50-60 minutes, or until the cheese cake is set. Let the cake cool before removing from the pan. Chill at least 8 hours before serving.
