Chocolate Banana Pudding Parfait

  • For the Pudding:
  • 1/4 c. cornstarch
  • 2/3 c. sugar
  • 1/2 t. salt
  • 3 egg yolks
  • 2 c. milk, divided
  • 2 T. butter
  • 1 t. vanilla
  • 3 bananas
  • For the ganache
  • 1 1/2 c. milk or dark chocolate chips
  • 1/3 c. heavy cream
  • 1/2 t. vanilla
  • 16 vanilla wafers, crushed
  • Whipped cream for garnish
DIRECTIONS
  1. Start by making pudding. In a sauce pan combine cornstarch, salt, and sugar and stir together. Add egg yolks and 1/2 c. cold milk. Stir together. Meanwhile heat 1 1/2 c. milk in microwave on high for 2 1/2 minutes. When heated, turn on stove to medium high heat, stir mixture in saucepan and pour in hot milk. Cook, stirring constantly until mixture comes to boil and thickens. Turn off heat, remove from stove and stir in butter and vanilla. Set aside to cool completely before proceeding. When pudding has cooled, make ganache. Place chocolate, cream, and vanilla in bowl, microwave for 2 minutes at 50% power. Stir. If needed, continue to microwave in 30 second intervals at 50% power until melted and smooth. To assemble puddings, place a spoon of wafer crumbs in bottom of a pretty small glass, add a layer of cooled pudding, top with banana slices, drizzle with chocolate ganache. Repeat layer. Top with whipped cream. Chill until serving.
