Chocolate Cake with Strawberry and Whipped Cream Filling (vegan cake)

  • Cake Ingredients
  • 1 1/4 cups flour
  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2-3/4 cup warm water
  • 1/4 cup freshly brewed coffee
  • 1 tsp vanilla extract
  • 1/3 cup vegetable oil
  • 1 tsp distilled white or apple cider vinegar or lemon juice
DIRECTIONS
  1. 1) Bake cakes (for unique twist, bake in 5 separate 4-inch diameter rounds) at 350 degrees F for 20-25 minutes until inserted knife/fork comes out clean
  2. 2) Let cakes cool and then cut off crusts to form equal circumferences
  3. 3) Meanwhile, make whipped cream (vanilla + chocolate or just vanilla) filling and buttercream for outside cake
  4. 4) Prep strawberries to fill the cake
  5. 5) Assemble by placing one layer cake, one layer whipped cream, one layer strawberries, and so on
  6. 6) After assembling, crumb coat
  7. 7) Ice cake
  8. 8) Decorate as desired and enjoy!
