Chocolate Caramel Oat Squares
  • 1 ½ C flour
  • 1 ½ C oats
  • 1 ½ C brown sugar
  • ½ t baking soda
  • ¾ C unsalted butter, cut into pieces
  • 12 oz chocolate chips
  • ½ C whipping cream
  • 14 oz caramels
  1. Preheat oven to 350.
  2. Combine first four ingredients in food processor. Cut in butter until crumbs stick together. Reserve 2 cups of mixture in a small bowl. Press remaining crumbs into a 9x13 pan. Sprinkle chocolate chips over evenly.
  3. Unwrap caramels. In a small saucepan, simmer whipping cream. Add caramels and stir, over medium-low heat, until melted. Pour evenly over crust/chips. Sprinkle with reserved crumbs.
  4. Bake about 15 minutes at 350. Cool. Run a sharp knife around the edges of the pan. Cut into small squares, and refrigerate about 3 hours. I usually make 40 squares, because they are very rich and almost taste like little candy bar bites.
The most time-consuming part of this is unwrapping all the caramels!
