Chocolate Chip - Oatmeal Cookies

  • 2 cups sifted flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup shortening
  • 1 cup brown sugar, packed
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups quick-cooking oats
  • 1 (12 oz.) pkg. semisweet chocolate pieces
  • 1/2 cup chopped walnuts
DIRECTIONS
  1. Sift together the flour, baking powder, baking soda, and salt
  2. Set aside
  3. Cream together the shortening, brown sugar, and sugar in a bowl until light and fluffy, using an electric mixer at medium speed
  4. Add the eggs, one at a time
  5. Beat well after each addition
  6. Blend in the vanilla
  7. Gradually stir in the dry ingredients into the creamed mixture
  8. Blend well
  9. Stir in the oats, chocolate pieces, and walnuts
  10. Drop the mixture by teaspoonfuls, about 2 inches apart, onto greased baking sheets
  11. Bake in a 350 F oven for 12-15 minutes or until golden brown
  12. Remove from the baking sheets
  13. Cool on wire racks
