Chocolate Chip Banana Muffins

  • 1 3/4 c all-purpose flour
  • 3/4 c sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1/2 c vegetable oil
  • 1/2 c plain yogurt
  • 1 tsp vanilla extract
  • 1 c mashed ripe bananas
  • 3/4 c semisweet chocolate chips
DIRECTIONS
  1. 1. Preheat oven to 350F and prepare 16 cups in muffin tins
  2. 2. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, combine the egg, oil, yogurt, and vanilla. Stir in dry ingredients just until moistened. Fold in bananas and chocolate chips
  3. 3. Fill lined muffin cups 2/3 full and bake for 22-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks
