Chocolate Chip Cake

INGREDIENTS
  • 1/2 cup shortening
  • 2 1/2 cups sugar -- divided
  • 2 1/2 teaspoons vanilla -- divided
  • 2 1/4 cups sifted all purpose flour -- (or 2 1/2 cups & 1/2 tablespoon cake flour)
  • 2 1/2 teaspoons baking powder
  • 1 1/8 teaspoons salt -- divided
  • 2 1/2 cups water -- divided
  • 3 egg whites
  • 4 ounces unsweetened chocolate -- divided
  • 1/4 cup cornstarch
  • 1/2 cup milk
  • 1 teaspoon butter
DIRECTIONS
  1. Cream shortening, 1/2 cup sugar & 1 1/2 teaspoons vanilla until fluffy.
  2. Sift together flour, baking powder & 1 teaspoon salt & add alternately with 1cup water to creamed mixture.
  3. Stiffly beat egg whites & fold into batter.
  4. Grate 1 ounce chocolate & fold into batter.
  5. Bake in 2 greased & floured 8-inch round layer pans at 350ยบ for 30-35 minutes.
  6. Cool 10 minutes in pans, then turn out onto wire racks & cool completely. Frost with Creamy Soft
  7. Chocolate Frosting:
  8. Mix 1 cup sugar & 1/8 teaspoon salt & cornstarch in saucepan.
  9. Stir in 1 1/2 cup water. Cook & stir until thick & clear.
  10. Combine 3 ounces chocolate & milk in top of double boiler. Cook until melted.
  11. Add to cooked mixture. Add butter & 1 teaspoon vanilla.
  12. Cool & spread.
