Chocolate Chip Muffins

INGREDIENTS
  • 1 egg
  • ¾ cup milk
  • ½ cup vegetable oil
  • 2 cups flour
  • 1/3 cup packed brown sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2/3 cup semisweet chocolate chips
DIRECTIONS
  1. Beat egg; stir in milk and oil.
  2. Stir in remaining ingredients (except chips) just until flour is moistened; fold in chips.
  3. Fill cups ¾ full.
  4. Place custard cups on cookie sheet.
  5. Bake until golden brown.
  6. Custard cups: about 25 minutes
  7. Muffin cups: about 20 minutes
  8. Immediately remove from cups.
