Chocolate Chip Peanut Butter Bars

  • Base:
  • 2 1/4 cups oats
  • 1 1/4 cups brown sugar
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 cup (2 sticks) butter, softened
  • Filling:
  • 1 (14 ounce) can condensed milk
  • 1/4 cup peanut butter
  • 1/2 teaspoon vanilla
  • 1 cup chocolate chips
  • 1/2 cup chopped peanuts
DIRECTIONS
  1. For the base, mix together:
  2. 2 1/4 cups oats
  3. 1 1/4 cups brown sugar
  4. 1 cup flour
  5. 1/2 teaspoon baking soda
  6. 1 cup (2 sticks) butter, softened
  7. until crumbly and reserve two cups for the topping. Press this stuff into a 9x13 pan. For the filling, mix together:
  8. 1 (14 ounce) can condensed milk
  9. 1/4 cup peanut butter
  10. 1/2 teaspoon vanilla
  11. and spread this over the base. On top of this sprinkle on :
  12. 1 cup chocolate chips
  13. 1/2 cup chopped peanuts, but I usually leave this out
  14. reserved topping
  15. and press gently. Bake at 350 for 25-30 minutes or until gold around edges (center shouldn't be set).
RECIPE BACKSTORY
This is one of the Pillsbury best recipes that made it into one of their books and quickly became a favorite at the Choi Kwang Do studio where I teach and train. It's like an oaty blondie with plenty of ooey gooey. It goes together in a flash and is especially nice cut in small fingers and arranged with shortbread cookies and dipped strawberries.
